My family and I have been about 80% plant based for almost two years. And there are a lot of things That just aren’t the same when you eat the plant based version. I use to think that the Zuppa Toscana soup that you can get from Olive Garden was on that list. I recently found a recipe for a copy cat and changed several key ingredients to make it plant based and thought I would share the recipe. Bonus I cooked this in the Insta Pot. You’re welcome 😉

Ingredients
1 pkg of Plant Based Sausage
2 lbs of baby potatoes
1 cup of frozen or fresh onions
1 tblsp of garlic cloves
2 boxes (6 cups) of Vegetable Broth
1/2 a bag of pre cut Kale
1 cup Plant based Milk. I used regular Unsweetened soy milk
1 tbls of Italian seasoning
Salt to taste
Cooking Directions
I quartered the baby potatoes and put them in the Insta Pot with a cup of vegetable broth for 15 minutes.
Pour remaining vegetable broth into the Insta Pot along with remaining ingredients. Pressure cook in Insta Pot for an additional 5 minutes and serve.
