You want to talk about easy! I mean… literally bowl water and throw stuff in. But it tasted like I really did something this afternoon with the Vegan Chicken Tortilla soup friends.
Ingredients for Vegan Chicken Tortilla Soup
- 2 tablespoons extra virgin olive oil
- 1 bag Vegan Chicken cubed
- 1 bag frozen corn
- 2 cans of black beans drained and rinsed
- 1 cup frozen or fresh chopped onions
- 2 teaspoons Chili Powder
- 2 boxes Vegetable broth
- 2 tablespoons salsa
- 1 teaspoon Cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Directions
Frist, in a large soup pot, add two tablespoons of extra-virgin olive oil and grill frozen or fresh onions until transparent.
After the onions are transparent add the garlic powder and the cubed frozen vegan chicken. I used Gardein’s Terriyaki Check’n Strips. (I just didn’t add the Teriyaki sauce that the package comes with.) Alternatively, you could use Tofu if you don’t have vegan chicken around, you can choose to omit the “chicken” part altogether. I found that the corn and beans made this recipe pretty hearty.
Finish cooking the vegan chicken by simmering it for about 3 minutes or until thawed.
Next pour in both boxes of vegetable broth, frozen corn and drained rinsed black beans. I like to drain the beans because I don’t like that the bean broth was so dark in color. The broth made my soup dark brown and I was hoping for a rich red colored Vegan Chincken Tortilla Soup. If the color of the soup doesn’t bother you, you can certainly just poor the entire can intothe pot without draining the beans.
Lastly, season your Vegan Chicken Tortilla soup with your favorite salsa, cumin, garlic powder, and salt and pepper to taste. I don’t typically measure any of the above ingredients, I just eyeball a teaspoon in the palm of my hand like this.
After all ingredients are added, let the soup simmer for 15 minutes. Serve while hot. Garnish with Vegan tortilla chips.
** On Instagram I did add a tablespoon of unsweetened almond milk to add a creamy appearance. I am not sure it made a difference so I did not add it to this recipe. Feel free to add unsweetened almond milk if you like a creamy look to your Vegan Chicken Tortilla Soup.
